What is the white plastic tape you see on new cars just arriving to the dealerships? Where can I get some or something similar? I want something that is stick-on but easily removeable

Dont' now where you get it but I believe they put that on to prevent rail dust from sticking into the paint.
When the trains put their brakes on hard it can generate hot brake lining that flies up and gets into the paint.

not to mention small rocks and road dust if they are on car-carriers.

Dodgerunner is correct. The white wrap was intially designed for vehicles being transported via rail. Fine metal dust becomes airbone from the wheels, rails, or brake lining. This fine metal dust lands on a fresh paint boy and ruin the finish or cuase rust/stain if it rains.

The closest thing that I can think that you need/want is collision wrap.

Transilwrap, 3M, Fasson and other pressure-sensitive film manufactures make film with removeable adhesives of various stages of agressiveness. Static cling films work well, but the edges must be completly adhered for best effect. Any edge wrinkle can allow moving air to lift the film. Try a graphic arts supply house as a source.
