What tire size would yall run for 17x8 35mm offset? The car has the wcf coilovers in the back and wcf springs in the front. Would like low profile tires as well.

I am running 17x8 front wheels with 235/40/17 tires (24.4" diameter). I wouldn't run a tire any thinner than 235 unless you like the stretched look. Several mfg offer a 245/40/17 (24.7" diameter).

Front: 17x8 45et with 235/40/17
Rear 18x9.5 45et with 285/30/18

The front is a very tight fit on an 88 and the rear took a little more work and is even tighter.

On a 17x8" wheel, I'd go for 245/40-R17. What size are the front wheels and tires?

To run a 17x8 rim with a 245 tire, does one need to run a coil over in the back or will a wheel spacer work?

NM, after doing some homework I found my answer. Yes, for anything 245 and larger you will need coil overs with the spring perch cut.
