have a slow leaking tire and thought some big wheels might inspire me -- might try stockers but don't know what tires are available for 14 inch rims... will look....

However, Subaru wheels generally have much more positive offset than the Fiero GT or the Beretta GTZ wheels, usually betwenn +48-55mm.
Steel wheels are an option, and should be available in a variety of sizes. However, these will generally be a little heavier.
Given that you are looking for off-road use, you will need to consider available tire options. The photo provides an excellent example. I am wondering what gears are being used to push those tall tires.

Yes, that pic is amazing. My gearing will be stock 4.9, I am hoping the torque monster caddy and its auto will push it along. Perhaps steelies will be the most cost effective.
What do you think is the safest max amount of offset I can get away with? The car will also see road use...
Thinking tire rack might be the best, but not as inexpensive as junkyard...
You can put a 10.5" wide tire on a 7" wide wheel. It's done all the time. If you want a wider tire, buy a truck. Keep in mind that the bigger the tire, the farther out it will need to be spaced otherwise you'll hit things as you turn.
