My 2.8 currently has 7mm plug wires with the metal boot covers. What would be a good performing replacement and are the metal covers over the boots necessary?

You will not see any gain in performance by simply replacing your ignition wires - unless one or more of your wires are in bad shape and spark is escaping. A standard set of 7mm AC Delco or Bosch wires will do the job just fine. If you want to spend some more money and have a set of red plug wires than I would highly recommend the Taylor 74224 ( http://www.summitracing.com/parts/TAY-74224/ ). Those Taylor wires are made for the Fiero and they have the correct boots at both ends.

And yes, I would use the metal heat shields on the boots.

I ask because one of the boots came disconnected from the wire when I changed spark plugs. I don't know if its leaking spark or not car seems to run fine. I guess will look at it in the dark and see if I see any arcing.

Thanks for the link I like those wires. Would an MSD coil be a waste of money?

I would not purchase the MSD coil. If your coil is fine as is retain it.

The Taylor wires mentioned above are good. Also the Fiero Store's STI wires are fairly good - I have them on my GT - but they're a bit off in lengths compared to the Taylor wires. OEM, the V6 used red spark plug wires, and at some point in the 90s the OEM replacements were discontinued. If you're going for the correct look it's red plug wires with a light blue distributor cap.

I echo above to also retain the spark plug boots. I clean them up really good and if possible re-use them. Really the only time they can't be re-used is if grease and grime has caked them to the point they are damaged, or they have some sort of actual physical damage (like maybe an excessive spark arc that burned into them).

The MSD Streetfire coil is a great stock replacement. Well built. Around $30. It also works well with the Fiero Store STI plug wires and MSD cap and rotor. Oh yeah, there all red.

If your looking for stock, the cap and rotor are grey, plug wires red, coil black.

I was thinking that a hotter coil would give better throttle response and better gas mileage and I see that the manufacturers themselves went to "coil packs" for improved efficiency's. Wouldn't this hold true for the 2.8? I know it won't increase horsepower.
