Hi I am going through a 2.8 that was rebuilt 12 years ago but never run I an wondering what things I can take off of the motor and put back on or what things I have to replace such as the head bolts, so I have to get new ones

You will need all new gaskets, head bolts, and RTV for the lower manifold gap. You should also plastiguage all the bearings even if they are new, just to make sure. You can probably carefully take the pistons out to check if they are brand new, put them back in the same cylinder though, again only if the cylinders are freshly honed with new rings right now. You should replace both front and rear crankshaft seals if you are taking it that far apart.

Ditto. 12 years is a long time, I'd wonder about the water pump seal also (a lot easier with the engine Out than In)
