How hard is it to change a a/c belt on a 2.8 87 gt, and what is the easiest way of doing it?

I have an 86 and I'm assuming its the same, but not positive. It's not too hard. You'll have to remove the drive belt first, as the AC belt is behind the drive belt. Loosen the tension on the alternator, then remove drive belt. Then release the tension on the AC compressor, and pop off the AC belt. Put them back on in reverse order. Getting the tension right, and tightening the bolt is the toughest part, but all in all, not a bad job.

I forgot to mention, that I jack the car and do all of this from underneath. You will not be able to do it from up top.
