My sons 86 GT has a hunting idle when starting it cold. It revs up and down for about 1 to 2 minutes, not long at all, then it levels out and idles great. And there is no trouble restarting when the engine is warm. We just swapped this 2.8 in, replacing a bad 2.8, so this may be just a matter of getting it on the highway for about 30 minutes or so, and letting the computer do it's thing. Car is not titled yet, so I can't take it for a lengthy drive, but I'm trying to get out in front on this issue before that time comes. Thanks.

Make sure the throttle body is clean internally and take it for a drive. It'll have to relearn the idle parameters.

Update, after several days of just letting it run, and then taking it to the end of the street, and back, (can't go further, it's not registered) the idle is perfect!
