So i have some mismatched keys for my fiero, one is a gm and the other some lowes type key, i understand the letters are the key codes, but am curious to know if my 87gt came with the rubber head gm keys new? Or the standard metal ones?

Yes the keys had the black plastic coated head.
All GM vehicles those years had them.

The key code was on the "punch-out" of the key. The "punch-out" was usually punched out by the dealer and put on the metal ring of the key tag with the keys.

Fiero/GM keys with the black plastic logo GM logo ends were the OEM parts and coded A, B.C.D & E.

For instance the 87 and 88 Fiero will take a C ignition blank and a D door/trunk lock blank.
You can buy a exact blank set (ign + door locks) for $5.77 w free shipping on ebay from bbblanks. The Fiero Store also stock them
