I have an M4 an AK47 and 1911 as well as an M&P 40 (OK it was on sale...)

I am considering adding a shotgun for hunting (birds)

What do you all have/prefer use for birds (pheasant quail duck etc)

For quail hunting I use a Remington 1100 in 28 gauge. If you need/want less expensive ammo, use a 20 gauge 1100. For heavier birds I am somewhat unconventional and utilize a Browning Sweet 16. Both are excellent guns if you want a semi automatic. For an over/under gun take a look at the Browning Superposed in whatever gauge turns you on. I do not really like side by sides and do not have a recommendation on them.

Remington 870, Mossberg 500, Winchester 1300, or even the cheaper version of the mossberg 500 the maverick 88 are all fine shotguns. Walmart around here sells the Maverick 88 for under 200 dollars with a 28 inch vent rib barrel and a removable choke. Mossberg 500 and maverick 88 barrels interchange, pick up the 89 dollar nib 18.5 cylinder choke barrel and you have a multi purpose gun for under 300. Butt stocks also interchange, fore stock will interchange if you replace the entire pump assembly. Biggest difference is safety is on trigger guard instead of rear of the receiver. Only thing I don't like about the maverick is, it is Hencho en Mexico. Another option is the Mossberg 590.
Never did care for Semi Auto shotguns, I think the KISS system works when it comes to shotguns. I have owned, or used all but the 590 of the pump shotguns I listed. I kept the 88, because I don't mind banging it around, and it takes the abuse.

I don't hunt ( other than paper targets ), so this may sound stupid... But what do you do with the shot that is stuck in the bird?

Round these parts its good luck to find one. Truth is you shoulda shot the turkey at closer range or the cook missed/ didn't care.
