Does anyone on PFF work at subway? Can you answer what's in the bread?

So I'm standing in line subway yesterday for a $5 foot long. The buzzer goes off and the "sandwich artist" opens what appears to be an oven.

Steam exits as he opens the door, hits the ceiling and rolls across it. Loafs of fresh bread are pulled from the oven.

And the stink, a horrible chemical-like odor, void of fresh bread smell, enters my nasal cavity. This smell was trapped in my clothes, I could smell it all day.

There's a Nickel's bakery 20 miles from here, I occasionally pass by. The entire towns smells of delicious, mouth watering bread. Subway does not smell like this.

Over a summer break I worked at a bakery, the inside of a bakery smells nothing like freshed baked bread. It smells like yeast and preservatives, just like Subway.
The dough is pre-mixed so its was already raised and then mixed again. It just looses something when it sits for a long time like that. The bakery I worked in would cook the bread as soon as it has been mixed to avoid that smell. The end of the oven smelled good but I never did get use to the smell of raw dough.
Its kind of a sour smell, I cant eat there anymore because of it. Have them toast your bun if you have to eat there, it helps. That and bacon, everything taste better with bacon.

I like Subby's and I love my bacon, by God I love bacon but their bacon is a bit weak for my tastes. I mean, you couldn't threaten a Muslim with that stuff, kinda old, stale and limp. I understand they can't make it fresh to order but I wish they could do better with the bacon.

Those folks at Subby's Tubmarine are fastigous about cleaning, maybe the bread was the first batch out of the oven after a cleaning and possibly was that odor you noticed.

I have purchase breads from Boudin's Bakery and had it sent to my house. It just wasn't the same as the fresh baked sourdough you could get in San Francisco. I have never found real good sourdough breads from anywhere other than California.

I used to work for subway,The way the bread comes is frozen,Then they put it into a proofer and then they bake it.I cant say it real fresh.

Its all in the water. The same reason that bagels taste better in NYC.
