KFC right now, but this part is on every fried chicken I ever saw. It's really the part the tail feathers stick out of, but I've always called it a butt hole flap. It looks nasty, and I can't imagine why they leave it on there.

I believe it is what the tail feathers are attached to. My main beef { no pun} is when you buy packaged chicken breasts and they include all the skin they can find just to add to the weight. But to answer the question...........I don't know why they include it. Nothing beats a good piece of tail though.

That part is actually an oil gland. For anyone who's lived on a farm, they've probably seen a chicken preening itself. It will appear to be scratching that area with its beak, then will go to another part of the body, then back. It collects the oils in its beak, then spreads it onto its feathers. Birds do the same thing. When we caught and killed a chicken for a meal, that part was left on, but we never ate it.
Parson's Nose, Pokes Nose. LOL My Mother-In-Law from New England called it a Pooper Dooper.
Don't care what it's called--it looks nasty. I did see on google, that some places sell big 10 lb boxes of just that part. PIP is still down..A fire where the server is located evidently.
