I've been searching the Search Engines this weekend for a good European Baltic (aka: Latvian) Rye Bread recipe to no avail.

I did find a couple, however one was made with "Apple Cider" (Molasses maybe, but Apple Cider, I think NOT!) and another without measurements for the respective ingrediants.

Wondering if any of you know and/or can assist me in finding a complete recipe for this bread.

The nearest place to buy this bread is in Winnipeg at the Natural Bakery.

Did you try www.foodtv.com ? They usually have recipes there. They have a Swedish limpa (rye bread) recipe there.

Yes I did Av. No luck there either.

If Winnipeg wasn't so darn far away for me, it'd be no problem, I could live with running downtown and buying a few loaves. But I love cooking and baking my own stuff as it always tastes far better fresh and homemade.

All the bread cookbooks I have don't even have a recipe for it.

Sounds like you're talking about something close to Lithuanian Rye which my grandmother used to make when I was very small. I don't remember all the details but she used equal amounts of rye and white flour and I think she gave it 2 risings. If I get a chance soon I'll give my mother a shout and see if she happens to have the old recipie somewhere.

In the meantime, this recipie is pretty close to what I remember, except I don't remember her using either corn meal or molasses.
