Published by my colleagues at N.I.F.E. (Northern Illinois Fiero Enthusiasts), the Enthusiasts Guide to the Pontiac Fiero doesn't include that information, but if it did, I could see that being useful in avoiding disappointment when shopping for some unusual exterior/interior color combination, or in searching for a certain color of replacement interior part.
Because I'd like to see exterior/interior color combination information like that myself, as josef644 asked...

I seem to recall that, in the 1988 Pontiac dealers brochures the Yellow exterior paint is not allowed with beechwood interior on a Fiero and vice-versa. So it would appear that, unless you knew someone pretty high up at Pontiac, that you couldn't get that combination.

Well they look great as the famous http://www.Yellowfiero.com was red with beige to now be yellow and beige and it is one of the most desirable cars on the forum.

This is correct. I have the 88 factory order guides. Yellow Fiero GT's were available only with gray interiors and black lace wheels. That is the way my factory yellow GT is and all the other original yellow fiero's I have ever seen. I have also seen a factory yellow 4cyl coupe and it too had a gray interior. I would like to see mine with gold lace wheels on it. A few years later you could order a yellow Trans Am GTA with gold wheels and tan leather.

I have a high mileage 114K Yellow Formula with gray interior. I'm thinking of removing it and putting some beachwood from a coupe and putting it in. I wonder if it would be easier to sell when I get tired of it.

I think I'm going to get some charcoal plastic paint from the Fiero store and paint the gray plastic parts charcoal like the dash. That should fit in with the yellow-and-black theme.

Putting information together, I would venture to guess that because of the lead time of production back in the 80s they probably had the seats ordered for the Silver colored cars and discontinued the Silver color but still had gray interior ordered.
