What I know:
console is different - later year more square and have cup hold on the rear (IIRC jscott1 has this style in his car) - I *think* this happened around 97, but not sure.
gages are different - also different between V6 and V8 (I seem to recal that there are also differences depending on which V8) models (never mind the US/Canadian versions) - 97+ gages have the digital odometer and fuel gage is ECM controlled, 98+ gages are all ECM controlled - plus other cosmetic changes throughout the years.
filler piece between dash and windshield - there is a slight difference in the curve between the passenger airbag and the gages, but have no idea the year that this change takes place. As such, there is probably a difference in the dash pad itself. I had to modify the filler part I have to match the curve of the dash - I was lucky that is was nothing a file couldn't fix (vs. having to fill).
There is a black dash pad - but this is really rare. I have a wrecker near me that only deals in the F-body cars and he only has 1 black dash in the several thousand that he has in stock.
Door panels are either cloth or leather inserts.
About all that I found out from when I was digging up the parts for mine...
