when i bought the car i thought that it would be somewhat easy to do a fastback conversion..... well i found a guy that would sell me everything i needed along with all of the other out panels and a few extra things......sooo im starting to take off the door skins when i find that the owner before me stripped the torx plastic caps.... i think i prolly need to drill them out but would rather not..... anyone have any advice or similiar experiences?

Under the plastic cap is a metal screw with a torx socket also, just cut off the plastic.

A fastback conversion does not require the door skins to be removed. I assume you are also adding all the GT ground effects as well. That requires the doors skins, quarter panels and fascias to be removed and replaced. To be correct you also need the wheel well liners and a lot of other things. It's a big job to replace nearly every panel on the car, (except the roof and hood). Hopefully you have all the little pieces you need to get the job completed.

Jazz is correct. Just get a chisel and hammer off the surface plastic leaving the metal bolt with torx socket

Just use a small drill bit and drill the plastic from the center of the torx bolt hole (do not drill out the torx teeth, just remove the plastic from the very bottom of the hole). This allows the tool to be fully seated and grip steel on steel vs steel on plastic.

Im some cases I've been able to get a grip on the top edge of the whole thing with a vise-grip, then turn enough to break it loose so the torx could be used to pull it out the rest of the way. I've been lucky so far....
