On my 87 coupe the drivers door could be tighter, what is the proper procedure in moving the striker in.

Is your door latching correctly? Is it loose when the door is closed. Your latch mechanism itself could be worn. You can move the striker bolt a bit more once you loosen it, but it won't move to much. If it needs to be moved more, you will need to remove it and grind some of the sheet metal. There is a capture nut it screws into that can fall inside if you remove the striker, if you drop it inside you will need to remove the interior trim to gain access to it.

Latches correctly, but not close enough to the body. You can push it in slightly but driving over bumps it rattles.

take some masking tape and use it to mark the bottom and side of the latch on the door jam. Loosen it and just move it toward the interior of the car. A little does a lot...1/16" can be huge. The tape will give you a reference point. If you mess up you can always go back to where it was.
