Will a cam from an 87 2.5 Vin U engine work in an 87 Vin R engine?

Vin R was the 87-88 engine in the 2.5 Fiero. It had no distributor, it was a DIS engine. Sounds like you are saying in your opinion it would work.

The R designation was used for all 2.5 L4 engines used in the Fiero. The '84 engine used flat tappets, the '85 and up used roller cams. The '84-86 use a distributor, the '87 and '88 cars used DIS. The '88 intake is definitely different, and I think the '87 is the same as the '88 intake. I have no idea if the U motor will work, you'll have to look at things like accessory mounting bosses, intake and exhaust mounting, water pump mounting, starter location, etc.

I seem to recall that the main difference (don't quote me on this, and someone please set me straight if I'm wrong here) between the U and R engines was the cylinder spacing. I think the U engines have tighter spacing, and if this is the case, I would imagine that the cam would not work in an R engine.
