I do it the easy way, I turn on the headlights with the hood up. When the lights are all the way up I unplug the socket so they go out. The rest of the lights are still on, but since the others aren't hot enough to burn me or drain the battery I don't care. My knobs are free wheeling and will hold up the headlights if spun manually, I just find it quicker to unplug, since I'm usually changing a headlight is why I want it up.

You can also turn on the parking lights and lighly press the headlight switch to raise them without turning on. That's what your supposed to do to wash them.

to get the headlights to stay up temporarilly, turn the headlights on (they will go up) then pull the grey part of the headlight switch back, using your finger on the side of the switch.
the lights will go out but stay up, and your parking lights will stay on.
If you want to leave them up for a while, to work on them, then turn them on, and disconect the battery. or like the guy above said, disconnect the motor connector next to the headlight, and that light will stay up when its off.

Turn on the headlights. Once they are up disconnect the blue wire at each headlight motor. The blue wire gives the signal and power to lower the headlight (at least it does on 84 through 86 models).
You can now turn the headlights off and they will stay up.
If this is a persistent issue (as someone mentioned, living in snowy places, or what have you) you can also wire a switch inline to keep the lights up at will. I added a switch on mine simply to save wear and tear on the headlight motors, which I have rebuilt.
