Remove the flywheel dust shield.  It is bolted to the trans and covers up the lowest part of the flywheel.  You should be able to see holes in the side of the flywheel that you can stick a screwdriver in to prevent turning.
The engine is turning even while the car is in 5th gear. 
5th gear is going to be the easiest to turn the engine with because the gearing is low.  I think you would want reverse since the ratio is the hardest.  I might be backasswards here though...
Also, where is the AC compressor belt adjusting bolt?
Arrow in pic points to adjustment bolt.  It is in the groove on the silver bracket.  You might also want to look from underneath the car to find this bolt.
  
 
Do I have to adjust these bolts to take off the old belts and put the new ones on?  Or does it just make it alot easier to do.  Thanks
Yes, in order to get the belts off you must loosen the adjustment bold on the AC comp to get the V belt off and then loosen the adjustment bolt on the alternator to get the serpent belt off.  Once the belts are removed, you can then remove the crank pulley.
