Let me start off by saying, I don't care for biscuits. Yes, I'm in New Jersey, that may explain a lot. Every biscuit I've had is either dry and dusty, or greasy. So, I've never cared for them. But, wife says, "I'm going to make buttermilk biscuits." Cool, knock yourself out, girl.
Now, we all see the minefield I'm stepping into here. Regardless of the outcome, I'm gonna be eating at least one biscuit, and I'd better act like I like it. However....
SHE NAILED IT! Dang, biscuits are actually good. These weren't like throwing a handfull of flour in your mouth, nor like licking a can of Crisco. For a Jersey girl raised in an Italian family, she did great.
I'm proud of that woman. Just had to share.

Making good, 'real' biscuits is almost a lost art among the current generations and really isn't easy for anyone. If your sweetheart can do it, you dang well better keep her.
My own wife's efforts in this realm involve only opening a tube of those overly flakey "Grands" things, which I despise.
Using real butter (room temperature) as the fat ingredient is the key to making good biscuits. Lard makes a too heavy biscuit, and liquid vegetable oil is a nonstarter. Creamed vegetable oil (Crisco or mragarine) is better but works not nearly as good as real butter.
Folding and kneading the dough multiple times results in more flaky biscuit but I don't care for them. You can easily over knead the biscuit dough too, resulting in stretchy dough. A brand of flour called White Lily seems to work best because of it's gluten level. The end product rises better and comes out lighter.[This message has been edited by maryjane (edited 03-10-2021).]

She's a keeper indeed. After 37 years, (!) I guess she's not returnable.

Way back in the 60s and 70s I used to really like the KFC biscuits- They were slightly sweet- Almost like a very thin glaze on the outside....Later, they switched to very salty/flaky biscuits that I did not like. Later I found that some "Hawaiian" named brand made almost exactly the same biscuit as those old KFC ones.....Not sure which one it is but that's my story and I'm sticking to it!
I can't eat gluten now because of my Lupus crap........There are Gluten-free biscuits but I rarely eat biscuits anyway- and never eat KFC anymore because of the horrid commercials they had a few years ago.....
