I think I like Louisiana Brand for the same reason most people don't: salt and vinegar. It is that vinegar taste that I remember from Trappey's on my grandmother's table over 60 years ago.

I've always felt spiciness was a pleasant side effect of adding chile for flavor. My family is from New Mexico, and there's always been way more focus on the flavor of chile than the heat. Sometimes you get a hot batch of chiles and whoops your enchiladas/stew/whatever into being too spicy; the variety of heat levels in hatch chiles is bonkers.

I've always associated super spicy dishes with Thai and Indian food.

Tabasco sauce is fermented in whiskey barrels that were used to age Jack Daniels Whiskey..
