Pecan (or walnut) pie is the easiest pie you will ever make. I can mix it and have it in the oven in 10 minutes easy.
preheat oven to 350°F
1 cup light or dark Karo syrup.
3 slightly beaten eggs
1 cup plain granulated cane sugar.
1/2 teaspoon salt.
2 tablespoons (1/2 stick) melted unsalted butter. (don't use margarine)
1 to 1 1/2teaspoons of real vanilla extract (depends how much you like vanilla)

Mix it all together with a spoon. (Mixer puts too much froth in it and it doesn't bake well)

Fold in 1 1/2 cups or a 6oz package of whole or chopped pecans or walnuts just until mixed. (chopped works better)
Pour the whole mixture into a store bought 9" frozen pie crust-deep dish if available (or make your own)
Set it on a cookie sheet in center rack of oven and bake about 60-70 minutes. If you push down on the top and it comes back up, it's done.

If you want the classic southern version: Set oven on 375¨°F. This one takes only about 5 minutes more to mix up.

1 teaspoon vanilla
2 cups of pecan halves..toasted.
5 1/3 tablespoons of melted unsalted butter.
1/2 teaspoon of salt.


same as the other recipe but before adding mixture to the crust, line the crust with finely chopped pecans. It will take about 1/2 cup to do this part.
Substitute 1 cup light brown sugar for the white cane sugar.
Chop another 1/2 cup of pecans and add them to the mixture.
Pour it in the shell and use the last cup of unchopped pecan halves to lay on top of the mixture after pouring it in the crust.
This one will take about 45-50 minutes.

Let both of them cool completely. The mixture you made and poured into the shell is a custard and it has to cool for it to 'set'.

I'm running solo over here and have no plans for Christmas. As such, I grabbed a Red Barron Pizza the other day when I was shopping. You can never go wrong with pizza!
