I will try this when I can. Car won't start currently, I believe it is having spark issues again.
My current thoughts is that the gauge is just off. I like the idea of feeling the hose to figure out when the thermostat opens.
I have had both of the fan switches that Rodney offers with no luck, which further makes me think that it is the gauge.
Like I mentioned can't confirm now since the car won't start.

I agree with you as you replaced the temp gauge sending unit.
When you get the car running again, YES: Read your coolant gauge immediately after when the thermostat opens and use this starting point on your coolant gauge....
If so as the coolant gauge IS really off, I bet your problem is in the instrument panel {a.k.a. POD}
