Carburetors are technology that goes back over 100 years. With that setup fuel mixtures are basically fixed. With MPFI the fuel is adjusted continually for speed, load, temperature and driving conditions. Exhaust emissions are also much higher with a carburetor. Engine life will be shorter with a carburetor. Choose what is best for yourself but I don't believe that a carburetor on an engine designed for fuel injection is a good idea. I think a carburetor made sense as a performance upgrade in the early years of fuel injection, simply because it was so hard (in aftermarket) to upgrade your fuel injected car beyond basic things... especially in a car that didn't support a MAF style of system. Of course, that all improved, more so in the last 10 years with a dozen or so really highly tuneable systems...
But a "carb-similar" set-up can still produce a ton of power, and provide that unique sound that people yearn for. The good thing is you can still have that with a 4-barrel TBI replacement fuel injection system... you can still get that awesome sound effect...
Video I took about 15 years ago when I used to have a 73 Olds Cutlass Supreme (totally stock 350, I'd just rebuilt the carburetors and tuned the secondaries and put an open element air cleaner on it)...
It was before people had GO-PROS or hand-held phones with cameras, etc. I was using a Sony Muvica which I had to hold in one hand, so the video is incredibly shakey. Sorry...
It doesn't get good until like 2 minutes 30 seconds.

Loved that video, brings back memories. Dad bought a new 74 Cutlass Supreme with the white interior & cranberry exterior, great car. I ended up owning for a while, wish I would have kept it but I sold it to help buy a new 85 Fiero GT!
