Can't imagine any unplugged sensor not triggering a code.

My 88GT kept dying for seemingly no reason. After it cooled off, could start again. After really cooled off, would run with no problem. I had to have it towed several times, usually after I'd pushed it to the side of the road/lane. Couple of shops thought they'd fixed it, but what had really "fixed" it was sitting in the shop and cooling off.
Finally I bought an idle air control (IAC) from NAPA and a socket from Lowe's big enough to take the old out and install the new. Took a few starts for the ECM to get to know the new IAC, but engine has run fine since.
