Is there a manual or publication or diagrams to help with the removal of the body panels on a GT. I'm asking because I don't want to force something and break a tab or a very important piece. Would appreciate if somebody could point me to something that would make the job easier.

Best I can tell you is look for notchback to fastback conversions. That will help the rear panels. Then just look up door panels, there is a lot about those because folks doing window motors. The front is pretty straight forward. The only thing you dont want to remove is the roof panel.

Because the roof is "Glued" to the metal on the front. I believe same thing w/ the windshield and very easy to break the roof panel. I think the roof back is over the rear clip making a pain to remove the clip w/o removed or prying up the roof and not breaking it. "Bolts" for the roof are it the roof and can break them too if rust got to them.
See my Cave, Doors on how to adjust the skins.
Get Fiero FSM and read back of it for more.
Note: Outer Door Skin T30 screws get rusty. carefully pry the edge of plastic on the screw to spray the "nut" w/ PB Blaster etc a day or three before you work. Don't spray a lot of oil. Most will run down and be a real mess, often a smelly mess too. Oil will damage the skin too. Suggest you remove oil on plastic as much and as soon as possible and w/o using strong solvents that eat most plastics too.

Back of the roof only needs to be lifted an inch or so to clear the rear clip bolts. Shouldn't be an issue cracking the top.
Here's a pic of the 3 bolts that need to be cleared to get the clip off. Access to them is in the cabin as Ogre mentioned.
