To make it totally clear I have done the following so far
Auto engine harness Auto steering wheel Auto brake pedal assembly Connected the clutch safety yellow and purple together
Next
Repin c500 E3 to A4
What else?? Is there any plugs by the foot pedal assembly that are no longer used?

I would repin the C500 connector on the engine harness by moving the heavy yellow wire at A4 to E3. The manual start signal comes in to the C500 chassis side at E3, but the auto cars it was A4. It's a bit of a pain to repin the chassis side.
If you car has cruise control, there is a switch in the pedal harness for disabling the cruise when the clutch pedal is depressed. You can bypass the switch by connecting the two wires together and discarding the plug. There is also a switch on the brake pedal, since the switches are in series, the brake pedal switch will disable the cruise function.

Why does it matter whether the repinned happens on the chassis connector cw the engine wiring harness? Asking becuase doing it on the engine wiring harness is obviously way easier. Just do it in reverse.

As long as only one side of the connector is repinned, it will work.
As I stated in my above post, it's easier to repin the engine harness.
