Cant really BBQ in an apartment in the winter....Well, ya CAN but the Fire Department gets all bent out of shape about it for some silly reason.

I've taken more and more to making simple 1-pot meals.

Tonight. 1 big pot.

Browned up 2 pounds of stewing beef and cut it into small chunks.

Tossed in a can of mushroom gravy, a can of mixed veggies, onion, garlic, and some cut-up baby potatoes.

Throw in about 3 cups of rice and a bunch of water..

And in about 40 minutes total I have enough food to last 3 dinners of good tasty eating...with minimal dishes to do.

This kinda stuff is getting to be a regular habit around here.

Bake you a pork roast, with just enough carrots & potatoes for that evenings dinner.

The next day get you that little box of curry (soft bars inside) in the isle that has the Mexican & Chinese foods.
Get you a pot of rice going.
In a skillet satay a large onion.
Add a fair amount of some water and all the curry bars.
Stir until the curry bars are dissolved.
Add the chunked-up leftover pork-roast (or shredded if desired).
Simmer 5 minutes.
Add more water to achieve the desired thickness.

Plate the rice, with a scoop of curry in the center of each plate.

It’s incredibly easier then it sounds.
Some people satay a sliced carrot with the onion, but besides what little sugar it brings to the dish, I think it’s mostly for color.
