I'm going to buy a machinist's straight edge and check them out with my feeler gauge. I can't find the specs for how flat the decks of the heads and block have to be. Anybody?

they wont be in spec.. do your best getting the heads right and bolt them on.

I'm going to get the heads flattened/resurfaced and use ARP studs. What do you think about the block, how flat does it need to be? What would you recommend for gaskets, just Felpro with copper spray?

I would check it to make sure it is not real bad.

From Engine Builder. Flatness specifications vary depending on the application, but on most pushrod engines with cast iron heads, up to .003" (0.076 mm) out-of-flat lengthwise in V6 heads.
