Installed a set of four 17"wheels/tires today and they fit fine. Used 17 x 7.5"W Sport wheels 35mm offset. Goodyear Eagle 1 225 x 45 x 17 in back and 205 45 x17 front. A friend of mine installed 18" and had problems with the tires hitting the wheel wells in front but his car was lowered 1" . Not sure about 18" size wheels but if Raydar says that they fit he probably uses a specific formula.

No specific Formula. Just that 35mm seems to be the ideal offset for pre 88 Fieros, as long as the widths aren't absurd. With a 225 section width, the shoulders of the tire are going to be in the same place on a 7" wheel as they will on an 8" wheel.
I have 17x7" wheels with 40mm offset on my '87 SE. They fit fine.
What is the section width of your rear tire? How close are you to the springs/struts/perches? 40mm is close. It may depend on tire fitment whether it will rub or not.
