Contemplating redoing a total interior. Are there any dash's that lend themselves to an easier replacement of the current dash than others? This will also probably come with an engine swap also. Right now I am considering a 3800 maybe from a Grand Prix. Would the Grand Prix Dash be too big? Considering buying a whole car? Also what about air conditioning? Is it easier to swap rather than convert?

There isn't one! Otherwise, I'd have done it already.
They all have their challenges and some are more work than others. But frankly I haven't seen one where I tell myself "I just gotta have THAT one..." - yet!

I have, It is in a Bugatti Veyron...............................LOL
Seriously though this one really looks good to me also. I just want something that will modernize the look of the interior, and not look out-of-place. The dash is just one piece of the puzzle, but a major one because you and the passenger always have it in your line-of-sight.

This is exactly why I'm considering just doing a custom dash/interior. At the end of the day, most of the dash swaps that have been done just don't quite look "right" to me. They may be well done, but they all look a bit off for some reason.
That being said, it would probably be easier to swap an interior than do a custom, one-off.
