What is the oil capacity on a stock 1987 Fiero GT? The auto parts store tells me 3 quarts. I can't find myself to believe this though.

You shouldn't believe him either... it's 4 quarts according to the service manual, with or without an oil filter change. If I were you though, I'd add 4 quarts, start it, then let it settle and check it again to top it up.
