I need to rebuild a 2.8 into a 3.1 and will need the crank, pistons and all the goodies for a 'normal' (stock rebuild) engine. Anybody know the most economical place to start looking?

ARI sells all that for $499 + shippping. They usually have one on eBay.

Or you could get a junkyard crank from a 3.1 mini van or Camaro with the 981 casting. Might be cheaper that way, might not.
